The S3's answer to the complaint nobody else takes seriously — a memory-foam collar that vents instead of cooking your neck for ten hours.
Cabeau's own marketing names the problem better than we could: a neck pillow insulates like a turtleneck. On a short hop that is irrelevant; on a long-haul in a warm cabin it is the thing that wakes you at hour four, sweating. The Cool cuts side vents through the foam so trapped heat has somewhere to go, and adds a pivot toggle so it fits worn normally, inverted, or backwards. It is about $25 more than the S3 and drops the seat straps, so you are trading head-drop anchoring for airflow. Which matters more depends entirely on whether you sleep hot.

Does a vented neck pillow really sleep cooler?
Cutting channels through foam gives trapped heat and moisture an escape route, so yes, meaningfully cooler than solid foam. Be clear about what it is not: there is no active cooling and no phase-change fabric, so it reduces heat build-up rather than making your neck feel cold. Cabeau publishes no temperature figure and neither will we.
Evolution Cool or Evolution S3?
The S3 has the seat straps, which is the better answer to head-drop. The Cool has the vents, which is the better answer to overheating. At $64.99 against $39.99 the Cool is the pricier pillow solving the lesser problem — unless you sleep hot, in which case it is solving the only problem you actually have.
Why would you wear a neck pillow backwards?
Worn with the thick part under your chin it stops your head nodding forward, which is the classic long-haul failure. The pivot toggle exists so the pillow still fastens properly in that orientation. It looks odd and works well, which describes most good travel gear.
